Cava grapes: the heart of sparkling elegance
BARCELONA – From July 5th to 14th, 2024, the UK will host the Cava Discovery Week, an event dedicated to celebrating Spain’s prestigious sparkling wine. Organized by the D.O. Cava Regulatory Council, this 10-day extravaganza aims to promote the unique qualities and versatility of Cava through a series of tastings, promotions, and gastronomic experiences.
Cava is a sparkling wine from Spain, primarily produced in the Catalonia region. It is made using the traditional method, the same technique used to produce Champagne, where secondary fermentation occurs in the bottle. This process imparts a complex flavor profile and fine bubbles, making Cava a distinguished choice among sparkling wines.
Cava, Spain’s renowned sparkling wine, is crafted from several key grape varieties. Macabeo, known for its floral and fruity notes, adds balanced acidity. Xarel·lo provides robust acidity and body, with earthy, herbal flavors. Parellada brings elegance and citrusy aromas, contributing to finesse. Chardonnay, although not traditional, adds richness and tropical fruit notes. Subirat Parent, also called Malvasia, imparts exotic spice and floral hints. Trepat, used mainly for Rosé Cava, offers red fruit flavors like strawberry and raspberry. Garnacha (Grenache) adds body, fruitiness, and slight spice, enriching Rosé Cavas.

Why Cava?
Cava’s appeal lies in its quality and affordability. While it shares the traditional production method with Champagne, it is often more accessible in terms of price, making it an excellent choice for both everyday enjoyment and special occasions. The wine’s crisp acidity, fine bubbles, and complex flavors make it a delightful pairing for a variety of foods, from seafood and poultry to rich cheeses and desserts.
Promoting Sustainability
The D.O. Cava Regulatory Council emphasizes sustainability in its production practices. Many Cava producers adhere to environmentally friendly practices, including organic farming and reducing carbon footprints. This commitment to sustainability not only preserves the environment but also enhances the quality of the wine.
A Growing Appreciation in the UK
